ABOUT PIZZA CLASS

HI, I'M BILL.
I LOVE PIZZA STORIES.

I've been making pizza since I was 15, and I now have more than 30 years of pizza experience. It started in a pizza shop kitchen and grew into years of home baking, free video classes, and now a series about where America's pizza came from.

HOW IT STARTED
AGE 15 · THE PIZZA SHOP
My first job: pizza cook
At 15 I got a job as a pizza cook at a pizza shop in my hometown. I learned many styles of dough, what it takes to make a good pizza, and how to survive a busy Friday night rush. Later I moved to a local pizzeria with a dough recipe of its own, and that small shop is where my love of the craft took hold. I worked there all through college. Best of all, I loved seeing how happy pizza makes people.
THE ENGINEER YEARS
Missing the shop
After college I took an engineering job and began to miss the pizza shop days. So I tried to make pizzeria-style pizza at home. It was not easy. I have kept at it ever since, chasing Chicago, New York, Detroit, Neapolitan, Old Forge and more.
PIZZA CLASS
Video lessons, free for everyone
As I shared my pizza and recipes with family and friends, I found many that wanted to experiment on their own. People kept asking for my recipes, and I got tired of writing them down. So I recorded the classes: ovens, equipment, dough, and the recipes that earned the compliments. Now you can enjoy these lessons for free right here on pizzaclass.com or on Udemy and YouTube.
PIZZA ORIGIN STORIES
Where the pizza came from
My new video series was inspired by journeys like mine: people who made American pizza their craft, and often their living. Small-town heroes, immigrant families and neighborhood shops, one city at a time. Every story has its sources on the page, and the verdict is left to you.
FROM MY OVEN

Every pizza on this site starts in my own kitchen or backyard. A few recent bakes:

TWO SLICES I'LL NEVER FORGET
THE HOMESICK NEIGHBOR

A neighbor from the Old Forge region of Pennsylvania told me her favorite childhood pizza joint. I researched the style and worked until I got it right, then surprised her with a tray. When she tasted it, she began to cry. It was a big part of her story, and I'll never forget it.

THE SKEPTICAL BROOKLYNER

A contractor working in my Pennsylvania home had moved from Brooklyn. I bet him I could make a true New York slice. I carried a cheese slice to him on a paper plate. He was skeptical, until the first bite. I heard him exclaim from three rooms away. He couldn't believe it came from a home oven.

WHY PIZZACLASS.COM?
PIZZA TAKES YOU HOME.

Pizza is a joyful American tradition. One slice can teleport you to your hometown, to your family, to the people you shared it with. I've watched it happen, and it's the best thing about this food.

PizzaClass exists to give everyone their own pizza story: to teach you how to bake it, show you where it came from, and help you pass the craft on to the next person.

EVERY SLICE COUNTS
Gourmet duck and pear or a three-dollar slice, both are pizza. Even the big chains started as someone's dream.
SHOW OUR SOURCES
Every story lists where the facts come from, and marks what's documented and what's legend.
YOU DECIDE
We lay out the bold claims and the rivalries, and leave the verdict to you. The comments are part of the fun.
